Air Fried Coconut Shrimp

You might be able to tell I’m obsessed with my air fryer.  It’s so stinkin’ easy to use, clean up, and it’s great for healthy cooking!  The best part of having the air fryer is that the possibilities with it are endless.  All I’ve had to do so far is go to Google for recipe inspiration.  Today’s ingredient: raw shrimp.

Coconut Shrimp with Honey Lime Sauce

  • 1/2 Cup Bob’s Red Mill Paleo Baking Flour
  • 1+1/2 tsp Freshly Ground Black Pepper
  • 2 Large Eggs (I use Eggland’s Best)
  • 2/3 Cup Unsweetened Flaked Coconut
  • 1/3 Cup Panko Crumbs
  • 24 Medium Peeled, Deveined Raw Shrimp, Tail-on
  • Olive Oil Cooking Spray
  • 1/2 tsp Kosher Salt
  • 1/4 Cup Honey
  • 1/4 Cup Lime Juice
  • 1 Serrano Chile, thinly sliced
  • 2 tsp Chopped Fresh Cilantro (Optional)

Stir together flour and pepper in a shallow dish.  Lightly beat eggs in a second shallow dish.  Stir together coconut and Panko in a third shallow dish.  Holding each shrimp by the tail, dredge shrimp in flour mixture, making sure not to coat tail; shake off excess.  Dip in egg, allowing any excess to drip off.  Dredge in coconut mixture, pressing to adhere.  Coat shrimp well with cooking spray.

Place half of the shrimp in air fryer basket in a single layer, and cook at 400°F until golden, 6 to 8 minutes, turning shrimp over halfway through cooking.  If you have larger shrimp it may take up to 10 minutes.  Season with 1/4 teaspoon of the salt.  Repeat with remaining shrimp and salt.

While shrimp cook, whisk together honey, lime juice, and Serrano chile in small bowl. Sprinkle shrimp with cilantro, if desired.  Serve with sauce.  Note: If you are keeping to a Keto lifestyle, skip the honey based sauce and just squeeze a bit of lime juice on instead.

Ham Wrapped Asparagus

asparaguswithhamaf2Talking to friends, I have heard a lot of them losing hope as the months of their dieting, and slow movements on the scale, drag on.  They’re getting bored with the foods they’re eating, or hate the foods that are promised to be the biggest help in losing weight, particularly eggs, on the #KetoDiet.  As one who suffers occasional food boredom as well, I’ve been sharing some of my favorite #MakeAhead snacks and #GrabAndGo meals that make me less tempted to cheat.

Air Fryer Ham Wrapped Asparagus

  • 8 Spears Fresh Asparagus, woody ends trimmed
  • 4 Large Thin Slices Ham, sliced in half (I use Columbus Brand Apple wood Smoked Ham)
  • Olive Oil Spray
  • Freshly Ground Salt & Pepper
  1. Lay asparagus spears in the basket of your air fryer and spray lightly with olive oil cooking spray.  Shake the spears in the basket to make sure the spears are coated.
  2. Season with salt and pepper and shake again before closing the air fryer.
  3. Cook spears for 3 minutes at 400° F, and remove from basket.
  4. Wrap each spear of asparagus with 1/2 piece of ham.
  5. Place back in basket, seam side down and lightly spray again with olive oil spray.
  6. Cook another 5-7 minutes at 400° F, shaking once in the middle of the time, until ham is lightly browned.
  7. Remove spears from basket and serve warm with grained mustard, if desired.

This is a great appetizer, light lunch, or even breakfast.  I love to make some of these and put them into the refrigerator to pack for a midday snack at the office!  #ThisGirlLovesToEat

Air Fried Skinny Bloomin’ Onion

outbackonionWhile there aren’t many of them left around near me, the worst part of going to Outback Restaurant was having to pass up their Blooming Onion because of the 155 whopping grams of fat and 123 grams of Carbs from the corn starch and flour they have in them from the deep frying.  Thankfully there is a work around now that there’s the Dash air fryer, using this slimmed down recipe, that results in a total of 8 grams of fat and 10 grams of carbs per serving!  That makes this a treat I can add to my #KetoLifestyle on occasion, which makes me very happy!

Air Fried Skinny Bloomin’ Onionairfriedonion

  • 1 Large Sweet Onion (I use a Vidalia) about 1 Pound
  • 6 ounces Beer or Seltzer
  • 1+1/2 Cup Flour (I use Bob’s Red Mill Paleo Baking Flour Mix)
  • 1 Egg
  • 2 tsps Salt
  • 1 tsp Cayenne Pepper
  • 2 TBLS Paprika
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Ground Cumin
  • Freshly Ground Black Pepper
  • Olive Oil Spray

Peel and cut your onion: 1. Cut off 1/2 inch from the pointy stem end of the onion, then peel. 2. Place the onion cut-side down. Starting 1/2 inch from the root, make a downward cut all the way through to the board. 3. Repeat to make four evenly spaced cuts around the onion. 4. Continue slicing between each section until you have 16 evenly spaced cuts. 5. Turn the onion over and use your fingers to gently separate the outer pieces.

In one bowl mix the beer, 1/2 cup of the flour, and the egg.  In a second bowl mix the remaining flour and the seasonings.

Dip the onion in the beer batter first and be sure to get in between all of the petals, next dip the onion in the flour and spice mixture making sure that there is coverage in between every petal. I wear rubber gloves and use a separate hand for wet and dry.

Spray the entire onion with Olive Oil Cooking Spray and Air fry for 13-15 minutes or until golden brown and done in all of the crevices.

While the onion is cooking prepare the sauce.  Combine:

  • 2 TBLS Mayonnaise
  • 2 TBLS Sour Cream
  • 1+1/2 tsp Ketchup (I use sugar free ketchup)
  • 1/2 tsp Worcestershire Sauce
  • 1 TBLS Drained Horseradish
  • 1/4 tsp Paprika
  • Pinch Cayenne Pepper
  • Freshly Ground Salt & Pepper to taste

Cover and refrigerate until ready to serve.

Serve the onion piping hot with the sauce.  #ThisGirlLovesToEat

Avocado Fries II

When you get a new #KitchenToy, like the 6 qt, 1700 Watt #DashDeluxeAirFryer you experiment.  My husband said he loved the recipe last week for Air Fried Avocado Fries, but he drenched them in Spicy Ranch dressing, so I’m not sure if he was being objective, and the amount of salt from the almond flour in the main breading component just wasn’t doing it for me, so I decided to give them another shot.  This version wasn’t as heavy, or as salty, and, I think, much better suited to the buttery freshness of the avocado.

Air Fryer Avocado Fries II

  • 2 Medium Avocados
  • 2 TBLS Coconut Flour
  • 2 Large Eggs
  • 3 TBLS Extra Fine Almond Flour
  • 2/3 Cup Crushed Pork Rinds (Any Flavor)  I used 4505 Cracklins BBQ

Using a rolling pin, meat tenderizer, or even a rubber mallet from the garage, crush your pork rinds (TIP: I leave them in their bag or use a paper/zip bag to avoid a big mess) until they 1resemble coarse crumbs.  Using a fork, combine with the almond flour in a shallow dish.

Put the coconut flour in a zip bag or shallow bowl.  In a separate bowl lightly beat the eggs.

Slice the avocado in half, remove from the shell, remove seed and slice each half into 4 portions.

Dip each slice in the egg wash then immediately coat with the crumb mixture.  Lay in a single layer in the basket of your air fryer.

Set the temperature to 400° F and set your timer for 8 minutes of cooking time.  Open the drawer at with 1 minute remaining, and, depending on the thickness of your slices, you may want to add 1-2 minutes if you want them crispier/browner.  When your slices have reached your desired shade of brown, remove the basket from your Air Fryer and immediately move them to a serving dish.  I served with Hidden Valley Spicy Ranch dressing, which has only 2 grams of carbs per 2 TBLS serving, making this a perfect #KetoFriendly treat!  #ThisGirlLovesToEat

Buffalo Cauliflower Bites

Changing over to a Keto focused diet has meant embracing some foods that I wasn’t a fan of out of necessity, like cauliflower.  But, not having been a prior fan of anything cauliflower related, it’s been a journey making cauliflower my friend.

To be completely honest, without mass quantities of Frank’s Red Hot, Butter, Zatarain’s Creole Seasoning, Pesto Sauce, Cheese Sauce or any version of Queso, and plain old Salt & Pepper, I would likely still be struggling with it…

I’ve had buffalo cauliflower at restaurants but never been able to replicate it at home using my oven. It has either come out overcooked or soggy.  Major fail!  Now that I have jumped on the #Airfryer bandwagon, I have finally managed to create a recipe at home that I’d actually serve people I like. 😉

Air Fried Buffalo Caulifower Bites

  • Medium Head Cauliflower OR 1 Bag Fresh Cauliflower Florets
  • 2 tsp Dried Cilantro
  • 2 TBLS (or more to taste) Frank’s Red Hot or other Hot Sauce
  • 2 TBLS Butter, melted

Either cut the head of cauliflower into florets or empty your bag into a medium sized bowl.  Sprinkle the cilantro over the cauliflower and stir with a rubber spatula to make sure it’s evenly distributed.

Mix the Franks (or other hot sauce) and butter until well combined and pour over the cauliflower.  Toss to coat the cauliflower.

Spray or brush the basket of your air fryer with olive oil.

Pour the cauliflower into the basket and close the drawer of the air fryer.  Set to 400° F and set the timer to cook for 18-20 minutes, depending on how much cauliflower you have.  Shake your basket every 4 minutes.  If, at the end of your cooking time your cauliflower isn’t as browned as you want it (I like mine to be browned at the edges), add some more time in increments of 2 minutes.

Serve with low carb ranch dressing and carrot & celery sticks if desired.  #ThisGirlLovesToEat

Air Fried Avocado Fries

I bought another #KitchenToy and now have a whole new way to cook healthy meals.  Last week Amazon delivered a 6 quart, 1700 Watt, #DashDeluxeAirFryer to my front porch, and my avocados have finally ripened enough to give it a test run!  I’m not sure why, maybe because it was a killer #LightningDeal, but I bought the biggest one they make.  I hope I use it enough to justify giving up my storage space for it, it’s HUGE!


Air Fryer Avocado Fries

  • 2 Medium Avocados
  • 2 Large Eggs
  • 1/2 Cup Almond Flour (I use regular, not finely ground)
  • 1/2 Cup Crushed Pork Rinds (Any Flavor)  I like 4505 Cracklins Spicy Green Chili & Lime
  • 1/2 Cup Grated Paramesan Cheese (I like to use a 3 cheese blend of Asiago/Parmesan/Fontina)
  • 1/2 tsp Freshly Ground Black Pepper

Using a chopper, food processor, or your Vitamix, crush your pork rinds until they 2resemble coarse crumbs.  Combine with the flour and cheese.

In a separate bowl lightly beat the eggs.

Slice the avocado in half, remove from the shell, remove seed and slice each half into 4 portions.

Dip each slice in the egg wash then immediately coat with the crumb mixture.  Lay in a single layer in the basket of your air fryer.

Set the temperature to 400° F, set your timer for 10 minutes and cook for 5 of the 10 minutes.  Open the drawer at 5 minutes and flip the slices over then continue cooking to the end.  I served with a low carb spicy ranch dressing.  #ThisGirlLovesToEat

Air Fried Buffalo Chicken Meatballs

buffalochickenmeatballs2After my first Dash Air Fryer test with the avocado fries didn’t bomb, I moved on to the scary territory of chicken.  Chicken can be hard to cook because you need to monitor the temperature very closely.  It has to be cooked enough so you don’t get sick, but if you cook it too much it turns into a rubbery or dry mess.  The out of sight, cook in a drawer without benefit of monitoring with a meat thermometer, method was a little bit daunting.  It turns out I had no reason to fear.

 Buffalo Chicken Meatballs

  • 1+1/2 Pounds Ground Chicken Thigh
  • 1 Egg beaten
  • 1 Green Onion chopped
  • 1 Stalk Celery, finely chopped
  • 2 +1/2 TBLS Almond Flour (not finely ground)
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 2 tsp Dried Oregano
  • 1 tsp Ground Black Pepper.
  • 1 tsp Salt
  • 1 – 1+1/2 Cups Buffalo Wing Sauce (I like Frank’s Red Hot)

Layout a sheet of waxed paper on your counter.

In a large bowl, combine all ingredients, minus the buffalo sauce.  Mix well using your hands.  Mixture will be sticky, I wear disposable gloves.

Roll mixture into about 2″ balls and layout on the wax paper until all of the meat is formed into balls.

Remove the air fryer basket and grease or spray it lightly with olive oil.  Place a single layer of the meatballs into the basket, put it into the air fryer, set the temperature to 400° F and cook for 13 minutes.  When cooking is complete check your meatballs to make sure they are evenly browned all the way around.  If they aren’t, add another 2 minutes time and finish cooking the meatballs.

When time is done, immediately remove the meatballs from the basket to a serving dish and drizzle with the sauce or put the meatballs into a bowl with a lid and toss the meatballs with the sauce to cover them completely in the sauce.  Serve with low carb ranch dressing and carrot & celery sticks if desired.  #ThisGirlLovesToEat

Turkey Day Prep: Keto Friendly Appetizers That’ll Please the Whole Crowd

Spinach-Stuffed-MushroomsTo serve appetizers or not on Thanksgiving is always one of my biggest questions.  I don’t want to have people be so stuffed they don’t eat the main meal, but I don’t want to have people complaining if things get delayed, as always seems to happen.

The problem with appetizers is twofold: if someone else brings them they bring way too many, and if I do them it’s something else I have to do while also cooking the meal.  Then there is the dietary debate…who eats how, etc.  The beauty of these Keto appetizers is that they will appeal to everyone (give or take) in the crowd when a couple of them are paired with a simple cheese and/or veggie tray and that should be just enough to keep the troops happy until the main event.

These could also be great side dish options.

Spinach Stuffed Mushrooms

  • 8 oz cream cheese softened
  • 3/4 cup grated Parmesan cheese
  • 1 cup chopped spinach
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 20 – 30 white mushrooms or baby bellas

Preheat oven to 350° F.

In a medium mixing bowl, combine softened cream cheese, onion powder, garlic powder and salt and mix well. Stir in spinach.  Spoon filling into the mushrooms and place in a buttered baking dish.  Bake for 15 to 20 minutes until the mushrooms are soft.

Parmesan Crusted Crushed TurnipsParmesan-Crusted-Smashed-Turnips

  • 12 small to medium turnips, peeled
  • 3 TBLS extra virgin olive oil
  • 3-4 cloves garlic, finely chopped
  • 1+1/2 cups grated Parmesan cheese
  • freshly ground sea salt & black pepper
  • finely chopped chives

Preheat oven to 375° F.

Place peeled turnips in pot of cold salted water and bring to a boil.  Cook 25 to 30 minutes, or until they can be easily pierced with a fork.  Drain and cool slightly.

Place the turnips on a clean, lint-free, dish towel on your work surface.  Using a spatula or other large utensil, press down on each turnip until they are all about 1/2″ thick.  Let them drain for 10-15 minutes then flip over to a dry part of the towel and let the other side dry.

Combine olive oil, garlic, and salt & pepper in a small bowl.  Brush both sides of each turnip with the oil mixture, press each side of each turnip into the Parmesan cheese, and place each turnip on a baking sheet.

Bake 20 minutes then flip each turnip over and return to oven for an additional 15 minutes until they’re nice and golden brown.  Garnish with fresh chives.  Serve with sour cream if desired. #ThisGirlLovesToEat

Baltimore Style Crab Cakes

When I am in the mood for crab but don’t want the mess & hassle of cracking shells and digging the meat out, nothing fits the bill like a crab cake.  I’m not talking about a crab cake that’s mostly crappy breadcrumbs and other cheap fillers, I’m talking a cake filled with lush, sweet crab meat and little more.

FandW092018The September 2018 Food & Wine Magazine features their 40 “Best Ever Recipes,” which lured me in with a luscious chocolate cake on the cover, but they hooked me with this recipe for crab cakes, nine pages from the back of the magazine on page 95!

Andrew Zimmern’s Baltimore Style Crab Cakes

  • 1/2 cup mayonnaise
  • 1 large egg, beaten
  • 1 tablespoon Dijon mustard (See note below)
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon hot sauce
  • 1 pound jumbo lump crab meat, picked over
  • 20 saltine crackers, finely crushed (See note below)
  • 1/4 cup canola oil (See note below)
  • Lemon wedges, for serving

In a small bowl, whisk the mayonnaise with the egg, mustard, Worcestershire sauce and hot sauce until smooth.

In a medium bowl, lightly toss the crab meat with the cracker crumbs. Gently fold in the mayonnaise mixture.   In Andrew Zimmern’s words, if you don’t over mix, and don’t pack your mounds too tightly, you will experience “pure, unadulterated crab cake heaven.”  Cover and refrigerate for at least 1 hour.

Scoop the crab mixture into eight 1/3-cup mounds; lightly pack into 8 patties, about 1+1/2 inches thick. In a large skillet, heat the oil until shimmering. Add the crab cakes and cook over moderately high heat until deeply golden and heated through, about 3 minutes per side. Transfer the crab cakes to plates and serve with lemon wedges.

  • Tip 1:  If you prefer, you can substitute 1 1/2 tsp yellow or spicy mustard and omit the Dijon mustard and hot sauce
  • Tip 2:  You can substitute 1/2 cup Panko crumbs for the saltine crackers
  • Tip 3:  You can substitute any lightweight oil for the canola oil.  I prefer olive oil.
  • Tip 4:   If you plan to serve these as appetizers you can scoop them with a small cookie scoop, a soup spoon or melon baller – depending on whether you want them to be a 1 or 2 bite app.
  • MAKE AHEAD Crab cakes can be prepared thru Step 2 & refrigerated overnight

The recipe as written serves 4 people 2 patties each alongside a peppery arugula salad topped with diced mango, pineapple & cucumbers with a squeeze of lemon juice & a tablespoon of vinaigrette dressing.  #ThisGirlLovesToEat

This recipe was originally published in 2012, and also appears on Andrew Zimmern’s website.  Food & Wine Magazine recommends pairing these crab cakes with a Muscadet#GirlsGoneWine  I’m not familiar with Muscadet, so I looked to my go to wine reference site, Wine Enthusiast, for an education on this brisk, lemony wine from the Loire Valley region of France.  Wine enthusiast says the flavor profile of Muscadet wine can vary from very neutral to tangy and saline.  Basic Muscadet wine is light in body and light in flavor, and may have a little spritz. Higher quality examples lean more towards a tangy saltiness and notes of flinty minerality, with a smooth texture and friendly, approachable nature.   As for specific recommendation, here’s a very affordable option:BougrierLesMartinieres

  • Bougrier Les Martinieres – This crisp, fruity white is an enjoyable accompaniment to shellfish and light appetizers. Its light sweetness adds richness to the light lemon, mineral and peach notes.  Total Wine $10.99

Bacon, Gruyère & Spinach Quiche

I love quiche.  It’s one of those dishes that can be served for breakfast, lunch or dinner, or it can even be poured into mini muffin tins and made into appetizer sized servings.  Quiche is also one of the rare egg-dominant recipes that can be made ahead and frozen for later use.  This recipe is one I found in a Williams-Sonoma cookbook years ago, and one that is still featured on their website. #ThisGirlLovesToEat

Bacon, Gruyère & Spinach Quiche

  • All-purpose flour for rolling out dough
  • 1 disk cream cheese pie dough, thawed, or purchased piecrust
  • 6 thick-cut bacon slices, chopped
  • 1 shallot, minced
  • 6 cups baby spinach
  • 3 eggs
  • 1 1/2 cups milk
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1/8 tsp. freshly grated nutmeg
  • 1/2 cup shredded Gruyère cheese

Prepare the pie dough (Cream Cheese Pie Dough link above) or remove purchased pie dough from package

Preheat oven to 400°F.

On a floured work surface, roll out the dough into a 12-inch round. Fit into a 9-inch round tart pan and trim the dough, leaving a 1/2-inch overhang. Fold the overhang back over itself and pinch to create a sturdy edge. Pierce the dough all over with a fork. Freeze for 15 minutes.

Bake the pastry shell until the edges are lightly golden, about 15 minutes. Transfer to a wire rack and let cool briefly. Reduce the oven temperature to 375°F.

Make the filling

In a frying pan over medium heat, cook the bacon until crisp, about 8 minutes. Transfer to a paper towel-lined plate. Pour off all but 1 Tbs. of the fat from the pan, add the shallot and cook just until softened, about 1 minute. Stir in the spinach and cook until wilted, about 3 minutes.

In a bowl, whisk together the eggs, milk, salt, pepper and nutmeg. Add the spinach mixture to the bowl and stir to combine.

Bake the quiche

Sprinkle the bacon and the cheese into the pastry shell. Pour in the spinach mixture. Bake until the filling is set and the crust is golden, 30 to 35 minutes. Transfer to a wire rack and let cool briefly. Remove the pan rim, cut the quiche into 6 wedges and serve warm. If freezing, set aside to cool (see note below). Serves 6.

Note: To freeze, let the baked quiche cool completely. Wrap in aluminum foil and freeze for up to 2 months. To reheat, place the unwrapped quiche on a baking sheet and bake in a preheated 325°F oven until heated through, about 40 minutes.
